Observation: Spanikopia stored in hot holding unit at 42C since half an hour ago. Repeat.
Corrective Action(s): The elevated metal pan was removed so that food can be in direct contact with heat. Spanikopita should be stored in hot holding unit at 60C or hotter or stored in the cooler at 4C or colder until it is ordered to be reheated.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach sanitizer bucket measured 0ppm chlorine. Solution was mixed since morning and it was 3pm at time of testing. Third compartment sink measured 50ppm chlorine for sanitizing.
Corrective Action(s): 100ppm chlorine is required for food contact surfaces. Use the test strip onsite to verify if staffs are unsure with concentration.

Observation (CORRECTED DURING INSPECTION): A black insert with spoon was stored in kitchen handsink. Repeat. No paper towel at this handsink either.
Corrective Action(s): Do not store anything in handsink. Always equip handwash stations with soap, paper towel, hot & cold running water.

Observation: Mice droppings noted in the dry storage room (beside standup fridge and behind chest freezer).
Corrective Action(s): Please remove mice droppings and monitor for pest activiity.
