Observed gaps in tile work below legs of water tank and behind in corner allowing the accumulation of waste. Corrective Action(s): Fill/cement gaps in tile and depression in floor behind hot water tank so no water accumulates in this area. Improve water flow in this darin if it is subject to flooding or back up. If a persistent problem, drains will need to be reconfigured. Complete prior to next scheduled inspection. Display cooling unit struggling to get below 4 C. operator not storing hazardous foods in this unit until it work properly. Temp logs in use. GOOD! All other cooling units measuring less than 4 C. Hot holding units all above 60 C. spray sanitizer at 100 ppm ok.
