209 - Food not protected from contamination [s. 12(a)]
Observation: * Boxes stored above food prep areas and this is unsanitary. Boxes to be stored on lower shelves if at all and food stuff taken out of boxes and stored on shelving to reduce risk of cross contamination. Food equipment must NOT be stored on floors as this is unsanitary. Also, food must be covered in storage areas at ALL times to reduce risk of cross contamination(eg. bread drying in banquet prep area, frozen prime rib meat in metal bin in freezer). ALWAYS cover food in storage!!
Corrective Action(s): * Ensure ALL food covered in storage. Ensure ALL boxes of food equipment/food stored below on lower shelving to reduce risk of contamination. Keep ALL food equipment/food OFF floors at ALL times to reduce risk of cross contamination. It is unsanitary to store food equipment/food on floors!!

Observation: * Build up of grime/debris found through out under tables and floors, etc., that requires immediate cleaning and sanitation. This includes banquet prep counters/floors, etc.
