Observation: Gaps observed under and on one side of back door that could allow rodent activity into the facilit. Rodents can cause potential food contamination with their feces, urine and/or saliva.
Corrective Action(s): Please seal the gaps/service the door accordingly.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Build up of debris/dirt observed in the corners, behind the doors, along the walls and under shelving units.
- Walk in freezer is unorganized and cluttered.
Corrective Action(s): - Deep cleaning of the abovementioned areas to be conducted.
- Re-organize the back storage area and walk in freezer and store all products at least 6 inches off the floor to facilitate regular cleaning.

Comments

Routine inspection conducted.

Observations:
- Temperature of front display cooler, prep coolers in the back and walk in cooler recorded at or below 4C
- One prep cooler turned off and not used for any food storage.
- Walk in freezer recorded at -18C
- Front ice cream freezer at -14C
- Handwash station available and has adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Low temp mechanical dishwasher was in good working condition. 50ppm chlorine residual recorded during rinse cycle.
- 200ppm bleach sanitizer solution present in spray bottles.
- Food storage practices were found satisfactory.
- Staff has valid FOODSAFE Level certificate (Exp September 23, 2024)
- No signs of pest activity observed during inspection.

Discussion:
Operator stated that the buffet services are provided on weekends. Hot holding units are preheated prior to transferring hot food into the units and the temperature of food is maintained above 60C.
Education provided on steps for proper cooling of hot potentially hazardous food and thawing procedures.
Importance of labelling sanitizer bottles to prevent potential chemical food contamination discussed.
