Corrective Action(s): - Ensure all food products throughout facility are always covered to further protect food from any type of contamination

Observation: During time of inspection, observed:
- Dead mouse in snap trap
- Mice droppings underneath shelving and behind flour totes
- Dead insects located underneath dry storage area at back wall
- Operator informed last time pest control company was in was during last routine inspection
Corrective Action(s): - Ensure the above areas are cleaned and sanitized
- Ensure thorough and deep cleaning of facility is done
- Ensure all foods are kept sealed and 6" off the ground
- Ensure any holes >= 1/4" are sealed with hard wire mesh/ steel wood or gap filler

- Employ a Pest Control Operator to service facility
- Have pest control service in facility immediately
- Keep all invoices in central location, supply to Environmental Health Officer upon request

- Heavy dust accumulation on fan cover of cooler holding fruit compotes
- Slight dust accumulation on fan cover upright cooler holding muffins
- Wire shelving in walk in cooler to have food debris accumulation
- Walls in walk in cooler in need of cleaning (mildew accumulation)
Corrective Action(s): - Ensure the above mentioned are all wiped down, cleaned and sanitized
- Ensure to continue maintenance of the facility

* Hot holding units maintaining temperatures at >60C
- High temperature available, adequate sanitization temperature reached via hot water (73.3C)
- QUAT sanitizer used for front service area, concentration at 200ppm
- General sanitation of facility - Needs improvement and continual maintenance
