Observation (CORRECTED DURING INSPECTION): Quats sanitizer solution strength too strong (registered at >400 ppm).
Corrective Action(s): New solution was created for both the sanitizer spray bottle and the sanitizing compartment of the 3 compartment sink.
Ensure solution is made as per manufacturer's recommendations (200-400 ppm).
Note, the test strips used to verify strength require a soak time of 90 seconds.

Routine Inspection

Handwashing sink (front and back) equipped with hot/cold running water, liquid soap and single use towels.
Walk-in cooler at 4 C or below.
Walk-in freezer at -18 C.
Prep cooler with inserts: bottom section is 3 C - reminder, do not overfill cooler otherwise cold air does not reach the other end of the cooler. Top section: guacamole, hummus and bean sprouts at 6 C - these items were relocated to the bottom section. Ensure all food in both sections of the cooler is at 4 C.
Drawer cooler under the grill: ambient air temperature was 4 C however temperature fluctuates rapidly. Recommend placing ice packs in cooler to keep the air cold.
Rice hot held at > 60 C.
General sanitation satisfactory.
Reminder: put ceiling covers back on.
