Observation (CORRECTED DURING INSPECTION): Slight mould/biofilm growth observed in interior of ice machine condenser panel and walls.
Corrective Action(s): Discard all ice in the ice machine. Clean and sanitize interior of ice machine and ensure to do so more frequently to prevent contamination of ice. Staff emptied ice machine and began cleaning at time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): At time of inspection, 2-compartment sink was not set up for manual warewashing (high-temperature dishwasher not working at time of inspection; see code 308). Restaurant had only been open for ~0.5 hours.
Corrective Action(s): Wash and rinse dishes in first compartment of sink. Sanitize in bleach solution in second compartment for 2 minutes, and allow dishes to air dry. Staff set up 2-compartment sink for manual warewashing at time of inspection; 100 ppm chlorine detected in sanitizing compartment.

Observation (CORRECTED DURING INSPECTION): Scoops stored directly in dry ingredients (flour, sugar).
Corrective Action(s): Store scoops in clean containers separate from dry ingredientts to prevent contamination of food. Staff washed and sanitized scoops at time of inspection and stored scoops in clean containers.

Observation (CORRECTED DURING INSPECTION): Bag of meat was found thawing at room temperature; temperature still below 4C.
Corrective Action(s): Staff cooked the meat at time of inspection. Ensure to only thaw foods under cold running water or overnight in the cooler.

Observation: High-temperature dishwasher not working at time of inspection. Operator has already called for service by repair company, service technician expected today.
