A routine inspection completed:
- Coolers 4C or colder; freezers -16C or colder; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle and cloth bucket had [Cl2] of 200ppm.
- High temperature dishwasher had a rinse cycle temp of 72C at the plate's surface, as per max/min thermometer.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with proteins separate or below RTE foods; and foods stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Exhaust canopy is clean and next professional service due in March 2023 as per service sticker.
- Outdoor food processing area is organized, clean, and absent of debris.
- No signs of pests.
- Valid FoodSafe certified staff present.
- All in order.

**Ensure to repair the broken, cracked, and chipped floor tiles by the noodle making station; repair openings in the wall around exhaust vent; and install and extend the roof over the outdoor food processing area (smoker, gas burners) with durable, permanent material (painter wood, metal, hard plastic, etc.) to protect the equipment and food. Have this completed by October 2023.****
