Comments

The operator has purchased a wrong type of chemical (purchased detergent instead of sanitizer). Also, it was noted during follow up inspection that the dishwasher needs to be serviced. The dishwasher dispenses chemical at the last step and then stops the cycle without mixing with water. The operator called for delivery of the appropriate sanitizer and service for the dishwasher at the time of inspection. Meanwhile, the operator is to use single-use cups to serve coffee and other beverages. All utensils and plates shall be sanitized in chlorine sanitizer (100ppm) in the 2 compartment sink for 2 minutes and then air dried.
