Observation: Operator has an expired FOODSAFE Level 1 certificate and the grace period has ended on August 31, 2018 . Operator stated over telephone yesterday that they had difficulty registering for the FOODSAFE Level 1 refresher course.
Corrective Action(s): Operator registered for the FOODSAFE Level 1 refresher course during the follow up inspection and will complete the FOODSAFE Level 1 refresher course within 10 days. Please provide the district Environmental Health Officer a copy of your valid FOODSAFE Level 1 refresher course certificate upon successfully completing the course.

Follow up inspection:
-Cleaning was conducted for the following areas to remove buildup: Area behind the prep. cooler, dry storage area, area behind the cooking equipment, and area adjacent to the under-the-counter cooler in the sushi bar.
-A new thermometer was placed into the prep. cooler in the main kitchen.
-Handsinks were all accessible for handwashing.
-Staff washroom handsink was still supplied adequately.
