Observation (CORRECTED DURING INSPECTION): REPEAT VIOLATION:
- One dead mouse caught on a snap trap underneath dishwasher inside kitchen.
- Presence of fruit flies around the handwashing sink at the bar.
Corrective Action(s):
- Monthly pest control and monitoring contract with Abell Pest Control; managed by the hotel side of the building as they manage the whole building as per the staff. Last visit took place on Feb 14, 2023 and they will be increasing their visit frequency to biweekly. Ensure that the report is reviewed by the bar / kitchen staff and follow recommendations indicated in the pest control report: Structural issues - seal the hole found in the wall behind the stoves. Organize clustering inside electrical room. Install door seals for electrical room, boiler room and internet room.
- Dead mouse was discarded by staff at the time of inspection.
- Discard food scraps in the strainer inside the handsink frequently. Sanitize and keep the area dry.

Observation:
- Sticky residue on counter cabinets storing wooden serving trays.
- Rodent droppings observed around the perimeters inside kitchen.
Corrective Action(s):
- Staff stated that they pressure wash the kitchen floor every Tuesday. Ensure cleaning is done every day and all corners must be cleaned for pressure washing. Sanitize areas affected with rodent droppings after removing the droppings.

Low temp dishwasher measured at 100ppm chlorine with test strips.
Glass dishwasher measured at 12.5ppm iodine with test strips.
QUAT sanitizer in spray bottles measured at 200ppm with test strips.
All coolers at 4C or below.
All freezer units measured at -18C or below.
Smaller ice machine in use - in sanitary condition. Large ice machine is not in use at the moment.

*Clean up has been done inside walk-in drink cooler / broken paper towel dispenser inside kitchen has been replaced / broken soap dispenser at the bar has been repaired since the last routine inspection.
