Observation: -Open bag of sugar stored within damaged cardboard box under coffee condiment table. Sugar is open to contamination.
Corrective Action(s): -Obtain pest proof, food grade container to store the open bag of sugar in. [Correction date: 23-May-2018]

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: -Grease/grime noted on floor near deep fryer area and around edges of equipment.
-Adhesive covering on lower shelf of prep table (adjacent to deep fryer) is peeling off. Food debris/splatter noted and surface can no longer be adequately cleaned
-Food splatter noted on wall adjacent/behind deep fryer
-Food debris noted at the bottom of the black cooler
-Dry food debris noted under dry storage shelving.
Corrective Action(s): -Thoroughly clean/scrub areas noted above to remove grime/debris paying particular attention to hard to reach areas.
-Remove worn adhesive covering and thoroughly clean surface
-Keep floor area clear of all items to facilitate cleaning.

-Hot and cold water, liquid soap and paper towel present at kitchen sink and staff washroom for handwashing.
-Coolers were at acceptable temperatures (4C or colder):
-Black 2 door cooler 2C
-Stainless 2 door cooler 4C
-Glass door cooler (kitchen) 4C
-Display cooler (right side) 3C. Left side not in use.
-Glass door drink cooler 3C
-Freezer functioning and maintaining food in a frozen state:
-Upright freezer -17C
-Chest freezer -20C
-Hot holding units maintaining food at acceptable temperatures (>60C)
-Cooked burger patties 62-65C
-Cream based soup 67C
-Chicken soup 75C
-High temperature dishwasher functional and met sanitizing temperature requirement. Final rinse at dish surface measured 75.7C
-Bleach sanitizer (200ppm Chlorine) present to sanitize food contact surfaces.
-No signs of pest activity noted at the time of the inspection.
-Operator has completed Foodsafe refresher course. Certificate posted.
*Aprons noted in staff washroom. Appear to be dirty/soiled. Ensure these aprons are laundered prior using again and ensure clean aprons (or in use aprons) are not kept/hung in the washroom. Store in a clean location.
