**Drain pipe and overflow behind oven is leaking. Bus pan placed underneath to intercept waste water. Temporary only and bucket should be changed daily. This must be fixed. Suggest this get fixed (properly) during planned major kitchen clean up. **Make sure settings on hot holding units are checked at beginning of the day and temperatures verified throughout the day. Use a probe thermometer for this. Cooling units all below 4 C; Hot holding units adjusted and are keeping foods above 60 C; Handwash stations all stocked; Dishwasher (50 ppm Chlorine) and surface spray bottles (200 ppm quats); OK. Premises looks good, organized and clean at time of inspection.
