Comments

Routine inspection conducted.
Kitchen:
- Hand washing stations supplied with liquid soap, single use paper towels and hot/cold running water.
- All coolers (preps, under-counters, walk-in, keg) at or below 4 degrees Celsius.
Note: Small prep. cooler near the 2-compartment sink is not in use/turned off.
- Freezers at or below -18 degrees Celsius.
- QUAT sanitizer (spray bottles) at 200 ppm.
- Low temperature dishwasher sanitizing with 100 ppm of chlorine.
- Test strips - available.
- Ice machine clean. Ice scoops stored in designated containers.
- Food storage - organized (covered/off the floor).
- Ice-cream scoop is in a dripper well. Dripper well in good operations.
Note: Observed in the prep. line coolers accumulation of water.
Friendly reminder: do not leave a small single use plastic container in a food item/use a proper utensil/.
Bar:
- Hand washing station supplied with liquid soap, single use paper towels and hot/cold running water.
- Coolers at or below 4 degrees Celsius.
- QUAT sanitizer (spray) at 200 ppm.
- Glass washer sanitizing with 12.5 ppm iodine.
