Observation: - Mouse droppings noted on floor in electrical closet. Droppings appear to be limited to this area.
Corrective Action(s): - Clean up droppings and disinfect area so as not to attract further rodent activity. Continue to monitor for further activity.
*Pest Control contract in place. Most recent report (from March 21) provided for viewing at time of the inspection. Follow all recommendations of Pest Control technician.

Observation (CORRECTED DURING INSPECTION): - Back door from kitchen to hallway open and door from hallway to parkade noted to be open at the time of the inspection
Corrective Action(s): - Keep back door to kitchen closed at all times (except when entering/exiting) to prevent pest entrance

Comments

- General sanitation satisfactory and has improved since previous inspections.
- Exhaust canopy appears clean/maintained
- Handsinks in kitchen and staff/public washroom supplied with hot and cold running water, liquid soap and paper towel
- Bleach sanitizer solution present in spray bottle. Label present. *Concentration when initially tested was >>200ppm chlorine. Solution was diluted to 100-200ppm at time of the inspection. Review mixing instructions with all staff. Sign posted at dishwashing sink with ratio of bleach to water needed. Use test strips to verify concentration.
- Manual warewashing in place. Staff knowledgeable about manual warewashing steps (wash, rinse, sanitize, air dry)

- Operator present and holds valid Foodsafe level 1 certificate (valid until January 2021). 2 additional staff present have completed Foodsafe level 1. Operator is working on having all staff Foodsafe trained.
*Slight mildew noted on caulking at 3 compartment sink. If this cannot be cleaned, caulking may need to be replaced.
