OBSERVATION: (1) Handwashing sink in food prep line broken and out of order.
(2) Display thermometre for walkin freezer noted broken and not working properly.
(3) High temperature dishwasher noted not-in-use at the time of visit.
CORRECTIVE ACTION(S): (1) Have handsink in food prep line fixed to ensure proper and adequate handwashing for kitchen staff.

OBSERVATION: Unidentified chemical spray bottles noted in premise. Kitchen staff unable to explain chemical sanitizer therein.
CORRECTIVE ACTION(S): Ensure all sanitizer/chemical spray bottles are properly labelled. Have all kitchen staff trained on proper use of each chemical/sanitizer.

*The following temperatures were measured:
-Walkin cooler 4.0 deg. C
-Walkin freezer -17.0 deg. C
-Prep Coolers at front of house 2.0 deg. C
-UnderCounter Cooler for diary products 2.0 deg. C
-Display Cooler 4.0 deg. C
-Cold holding unit for cream/milk 5.2 deg. C
-Hot holding for Soup 72.0 deg. C
-Hot holding for bacon & sausage 68.0 deg. C

*Ice machines note in sanitary condition with scoop stored properly.
*QUATS sanitizer solution noted at 200ppm from dispenser, bucket sanitizers and spray bottles.
*3 compartment sink currently in use for dishwashing and QUATs sanitizer therein adequate at 200ppm.
*All handwashing stations equipped with liquid soap, paper towel, hot/cold running water.
*Staff hygiene satisfactory at the time of visit --> FOODSAFE level 1 certified staff member present during inspection.
*ORKIN pest control company in service --> Report for 07/25/2020 reviewed. No concerns noted.
*No signs of pest activity at the time of visit
*General sanitation is satisfactory

-Social distancing flow markings noted in premise
-Plexi-glass shield noted at customer order/pay point
-Alcohol based hand sanitizer available for customers
-Dinning tables seats are spread 2 metres apart.


NOTE: A Correction Order is issued for both the broken handsink and dishwasher, which should be corrected within 2 days of issued order of 2020/08/12
