Observation (CORRECTED DURING INSPECTION): Chicken in the prep cooler measured at 42C
Corrective Action(s): The chicken was prepared an hour ago. Allow the chicken to cool at room temperature and ensure that it cools from 60C to 20C with in two hours and transfer it to the cooler and ensure it goes down from 20C to 4C with in four hours> monitor the temperature using probe thermometer

Observation: - Grilling units have lot of food and grease built up
- Undercounter shelving units ave food bebris on them
Corrective Action(s): - Thoroughly clean the grill units with hot water, soap and degreaser
- Maintain sanitary conditions throughout premises and clean all shelving units

Comments

Following were observed during routine inspection:
- Handwashing station is supplied with hot and cold running water, soap and paper towel
- All coolers less than 4C- storage cooler at the back, prep cooler, domestic cooler, cooler for take out foods
- Freezers less than -18C- icecream, chest freezer
- Hot holding for rice and quinoa - greater than 60C
- High temperature dishwasher measured at 74C during final rinse at the dish surface
- No evidence of pest activity
