Observation: Dirty pizza pans being stored on rack directly beside clean drying dishes and above box of parchment paper.
Corrective Action(s): Place parchment paper on rack above dirty trays and store trays on racks below drainboard to prevent accidental contamination.

Observation: Floors in freezer and under cooking equipment including deep fryer have a build up of grease or debris.
Corrective Action(s): Thoroughly clean and maintain these areas. Remove pallats from freezer and replace with a rack that has at least 6 inches of clearance underneath for cleaning. Ensure that staff are sanitizing their cutting boards regularly throughout the day between regular washing and sanitizing.
