Observation: 1. Chlorine bleach sanitizer is only used at the end of the day on equipment.
2. Meat slicer was just wiped down, meat residue and bits were still noted on equipment in hard to reach places.
Corrective Action(s): 1. Must use sanitizer on equipment after each use, between different items, or every 4 hours if continually using.
2. Ensure meat slicer is properly broken down and cleaned thoroughly to ensure all food has been removed before sanitizing.

Observation (CORRECTED DURING INSPECTION): Hand sink in the front and one in the back were out of paper towel.
Corrective Action(s): Must ensure hand sinks are fully stocked at all times with paper towel and liquid soap.

Observation (CORRECTED DURING INSPECTION): Found a container of food being stored on the ground under the work table.
Corrective Action(s): Must keep all food 6" (15 cm) off of the floor.

Observation (CORRECTED DURING INSPECTION): Found food thawing at room temperature.

Observation: Found grease and food build up on floors, inside coolers, under and around cooking equipment, as well as ventilation hood.
Corrective Action(s): A thorough cleaning is required throughout premises on the floors, walls around cooking equipment, ventilation system and equipment/food contact surfaces.

- Hand sinks had liquid soap, hot and cold water
- 3 compartment sink had 200 ppm chlorine
- spray bottle had 200 ppm chlorine
- no signs of pest activity noted during inspection
NOTE: found large container of stock in cooler at 4 C, operator advises was cooled down in small containers then placed into the larger container.
REMEMBER: proper cooling is from 60 to 20 C at room temperature in 2 hours then 20 C to 4 C in 4 hours in the cooler. Must be done in small portions, or using an ice band and/or ice wand.
NOTE: Dishwasher still not installed, only 10 chairs are out at time of inspection
