Observation: Utensil storage bin has build-up of food debris.
Correction: Storage bin is to be emptied, cleaned and sanitized.

Cleaned, sanitized food equipment and utensils are to be stored in a sanitary location that protects them from contamination prior to their next use.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Wiping rags stored outside sanitizer reservoirs with no detectable sanitizer residual.
Correction: All wiping cloth rags in use are to be stored in a container of sanitizer solution (100 ppm chlorine, 1 tea spoon of bleach per 1 litre of water).
Comments

Walk-in cooler 2 C, premise HVAC system has been serviced to reduce ambient air temperature to allow for proper cooler function.

Utensil storage bin has been cleaned and sanitized.

Wiping rags in use stored in 100 ppm chlorine sanitizer solution.

Discussed the maintenance of keeping temperature logs for cold storage and hot holding equipment for food.

Premise cleaning has been conducted. Ensure daily cleaning is practiced to maintain premise sanitation and discourage pest activity.

Closure Order is rescinded, premise may resume operation when ready.
