Observation: No sanitizer residual detected in the low-temp dishwashing machine. Sanitizer supply container is ~2/3 full.
Corrective Action(s): Staff contacted the dishwasher technician to service the unit. Avoid using the dishwasher or manually sanitize clean dishware in a 100ppm chlorine solution until dishwasher is repaired.
*Ensure staff check the sanitizer concentration in the dishwashing machine on a daily basis using chlorine test strips.

Observation (CORRECTED DURING INSPECTION): Hand-sinks in the bar area are not supplied with soap or paper towels for hand-washing
Corrective Action(s): Ensure at least one hand-sink in the bar area is supplied with soap and paper towels for hand-washing. Linen towels are not acceptable for drying hands, as they can re-contaminate hands with bacteria.

Observation: Opening noted under the rear door to the kitchen that could allow pest entry into the premises.
Corrective Action(s): Repair the damaged section of the floor in the rear doorway and/or install a new doorsweep to seal the gap under the door.

Observation: Sanitation in the back-half of the kitchen, the walk-in cooler, and the dry storage area needs improvement. Buildup of food debris, spill residues, etc. are an attractant for pests.
