There are missing light covers in the back area and back area mop sink light not working.
Some areas of the food preparation does not have adequate lighting.
Corrective Action(s):
Install missing light covers where needed.
Increase lighting in the food prep area and back area (mop sink).
Adequate lighting required to ensure safe preparation of food and to properly clean equipment/work stations.

Observation: There were missing ceiling tiles above the dry storage area.
Corrective Action(s): Replace missing ceiling tiles. Ensure there are no open areas, holes, etc. in the premises.

Observation: Paper towels are stored on rolls on top of counters by the hand sinks.

Health permit valid and posted.
Hand sinks stocked with liquid soap and paper towels.
- However, some sinks require proper soap and paper towel dispensers.
Walk-in cooler was at 4 deg C ambient temp.
Walk-in freezer was at -18 deg C.
Line coolers at 4 deg C. Small freezer at -18 deg C.
Sushi display coolers at or below 4 deg C.
Hot holding for miso soup above 60 deg C.
Dishwasher had greater than 100 ppm chlorine residual.
Operator has valid Food Safe 1 certification.
Temperature log not up to date.
- Ensure to maintain a daily temperature log as this is an important part of your Food Safety Plan system.
Note: Premises requires physical maintenance as structures starting to get worn out.
For future renovations, install properly sized hand sinks and install an additional one in the back.
