Observation (CORRECTED DURING INSPECTION): No sanitizer available in the front service area. Staff unaware that sanitizer is needed in the front service area. This issue has been noted on previous inspection reports. Telephone conversation with owner who said this is the first time he is hearing about this (manager of premises has not informed owner).
Corrective Action(s): Ensure sanitizer solution is readily available in all food preparation/handling areas (front and back). Food contact surfaces should be sanitized routinely throughout the day. Correction order will be issued if non compliance continues.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): No soap or paper towel available in the immediate area of the three compartment sink in the back. Staff unaware that soap and paper towel were required in this area. This is a repeated violation. Telephone conversation with owner of premises at time of inspection who said that this is the first time he is hearing about this. Owner said he will contact head office to inquire about the standard soap and paper towel dispenser.
Corrective Action(s): A hand wash station is required in the back area to wash hands between warewashing. Food handling also takes place in this area. Ensure the three compartment sink is readily equipped with soap and paper towel. Staff located roll of paper towel in holder and soap at time of inspection. This is satisfactory in the interim until the owner can have soap and paper towel dispensers installed. To be completed within 1 month. Correction Order will be issued if not completed.

Hand sink for the front service area and washrooms fully equipped. See violation code 401 re: soap and paper towel to be installed at three compartment sink
All coolers 4C or less (walk in, inserts, undercounter..etc).
Walk in freezer -19C,
Hot holding of soups, meatballs..etc higher than 60C
Reviewed heating process for hot foods. Soups are heated in the microwave to 74C and meatballs are heated in the oven to 74C, then transferred to preheated hot holding units to be maintained at 60C or higher.
Probe thermometer available on site to check internal temperature of foods. Ensure probe is sanitized between uses.
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
All foods appeared protected (ie. stored off the ground, covered...etc)
Quat sanitizer at source and in spray bottle 200ppm. Staff use single use paper towel to wipe counters. See violation code 302 re: sanitizer in the front service area.
Manual ware washing procedures reviewed at time of inspection . No concerns.Test strips available.
Staff member on duty had foodsafe training. Ensure all operators/managers have updated foodsafe if taken prior to July 29 2013.
