Observation (CORRECTED DURING INSPECTION): Soup and bacons in hot holding units were measured with an internal temperature of 55C and 56C respectively.
Corrective Action(s): Reheat soup and bacons to 74C and transfer them back into the hot holding units. Hot food must be hot held above 60C or above.

Observation (CORRECTED DURING INSPECTION): Food surfaces sanitizer not readily available at the time. Sanitizing spray bottle was empty.
Corrective Action(s): Staff refilled the sanitizing spray bottle with 200 ppm Quats sanitizer. Clean and sanitize food contact surfaces at the service area. Food surfaces sanitizer must be readily available all times during operation.

Routine inspection:
- Coolers (stand-up, sandwich, under the counter) maintained at 4C or less.
- Stand-up freezer functional.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- High temperature dishwasher registered 79C at plate level.
- General sanitation satisfactory.
- No pest activities observed at time.

*Temperature records not properly maintained. Only two days were available for review. Maintain temperatures on a daily basis and ensure records are available for review at least for 3 months.
