Observation (CORRECTED DURING INSPECTION): food debris observed on spatula and scissors that were stored on the rack and were last used yesterday as indicated by the operator.
Corrective action: Clean and sanitize the utensils.
Rationale: Food debris left on unclean utensils can support the growth of harmful bacteria and production of toxins, which can contaminate the food when the unclean utensils are used and can potentially lead to foodborne illness.

Corrective action: Clean and sanitize the gaskets.

General observations noted during the inspection.
1. Temperatures
-Prep cooler (top) measured to be 4C.
-Prep cooler (under the counter) measured to be 4C.
-Upright cooler measured to be at 3.9C.
-Beverage cooler measured to be at 4C.
-Walk-in cooler measured to be at 4C.
-Thermometers were available in the walk-in cooler and upright cooler.
-Temperature records were in use and recorded twice daily.

2. Sanitation
-Handsinks equipped with liquid soap, hot/cold running water and paper towel (kitchen and staff washroom).
-Three-compartment sink with drain plugs for manual warewashing available.
-QUATs spray sanitizer bottle and dispenser measured to be at 200ppm.
-QUATs sanitizer test strips observed to be available.
-Pizza cutters cleaned and sanitized after every 2 hours as indicated by the operator.

3. Food storage
-All food items were observed to be covered and stored off the floor.
-No ready to eat foods were stored below raw food items.
-Shatterproof light cover observed in the walk-in cooler.

4. Pest control
-No pest activity detected. Professional pest control company services the premises monthly.

5. Administrative
-One staff onsite has valid and current FoodSafe level 1 or equivalent training. (expires Oct 5, 2024)
