Observation (CORRECTED DURING INSPECTION): One prep cooler malfunctioning and not in use. The prep items were moved to a semi-functional cooler that operates around 10C. Ice bath had melted, resulting in food product getting stored at 10C
Corrective Action(s): Ice bath refreshed at time of inspection. Repair for usual prep cooler already scheduled for this evening.
Remember to keep hazardous foods at 4C or below at all times.

Observation (CORRECTED DURING INSPECTION): Dishwasher reading 0ppm chlorine sanitizer at time of inspection. No records on site to indicate when the issue began. Dishwasher was in use.
Corrective Action(s): 1) Use dishwasher only for "washing"
2) Use a manual sanitizing cycle in your 2 compartment sink. Soak then air dry ALL food contact surfaces.
3) Have your technician repair the dishwasher.
4) Acquire testing strips and measure the sanitizer level at least daily.

2) Apply a pest proof layer around pipes below dishwasher/ sinks
