Routine inspection
- Hand washing station is provided with hot/cold running water, liquid soap and paper towels.
- Kitchen under the counter coolers with inserts are at or below 4C
- Walk-in cooler is at 4C or colder. Food is organized and labeled properly.
- Food in Upright freezer is at or below -18C. Freezer is in the midst of defrost stage at the time of inspection.
- Soup in hot holding unit measured at 74C
- Proper washing and sanitizing of cutting boards is followed. Please ensure to sanitize main prep cutting board before and after food preparation.
- Ice machine is clean and maintained. Ice scoop stored outside in a container.
- Utensils used for food stored in ice slurry.
- Quat sanitizer with 400ppm concentration is provided in spray bottles.
- Mechanical Dishwasher sanitizer measured at 50ppm chlorine concentration. Sanitizer Quat 200ppm measured in three compartment sink.
- No obvious sign of pest at this date.
- Permit is posted.
- Customer washrooms are maintained.
- General sanitation is satisfactory considering inspection conducted after lunch rush.

Note: An odor was picked up in the dishwashing area at the time of inspection. Operator stated that grease trap is the source of the odor. Grease trap repair or replacement is being considered.
