Observation: 1) Pizza boxes found stored next to brooms and other cleaning equipment
2) Pizza peel/paddle found with a build-up of food debris (pizza sauce, etc)
Corrective Action(s): 1) Move pizza boxes to an alternate location where they will not become contaminated, discard any damaged boxes. Correction due: tonight before start of operation
2) Properly wash, rinse and sanitize pizza peel at least daily.

Observation: 1) Two metal trays used to store various kitchen utensils found with a build up of food debris
2) Observed a build-up of dirt, broken glass, and food debris under all shelving in walk in cooler an along perimeter of cooler
Corrective Action(s): 1) Clean metal trays to prevent any food debris from getting into food and from contaminating any food equipment. Correction due: tonight before start of operation
2) Give walk in cooler a deep clean removing all dirt and debris. Due: 1 week
