Observation: 1. Single use spoons used as scoops on spice rack next to cooking line. Single use spoons should not be used multiple times. Scoops will need to be washed and sanitized between uses.

2. Small metal bowls used to scoop ingredients.
Corrective Action(s): 1-2: Obtain reusable measuring spoons/cups with handles to scoop ingredients. Tools will need to be made of a durable material that is non-absorbant and easy to clean.

Observation: 1. Range hood baffles observed to be covered with dust and grease build up; staff stated baffles will be washed today. Normally cleaned every 2 months

2. Heavy grease build up along side of wall and ceiling next to range hood.

3. Tongs stored on pipe next to cooking line. Pipe shows heavy grease/food debris build up.
**Corrected during inspection** tongs belong to chef and have been removed and relocated
