Pizza surface temperature (left to right) : 60 deg C, 75 deg C, 68 deg C
- Upright 2 door freezer : -16 deg C
- walk-in cooler < and/or = 4 deg C Prep cooler < and/or = 4 deg C Pepsi cooler < and/or = 4 deg C
- using 3-compartment sink to clean and sanitize utensils and equipment. Dish cleaner and QUATs dispenser noted.
200ppm QUATs in spray bottles are being used to sanitize food contacting surface
- Can opener appeared clean
- All hand washing units are equipped with liquid hand soap and paper towel, have hot and cold running water.
- Operator is FoodSafe Certified and at least one staff have FoodSafe when the operator is absent.
- Operator is keeping a daily log for refrigeration unit temperature and pizza slice temperature
- Operator states that pizza stayed on hot holding for more than 1.5 hours are being discarded for quality control
