Observation (CORRECTED DURING INSPECTION): Front area hand sink's hot water supply was turned off. Operator turned on the hot water supply at the time of inspection.
Corrective Action(s): Handsinks must be supplied with liquid soap, hot/cold running water, and paper towels at all times. Failure to have handsinks properly supplied will result in violation tickets/fines.

Observation: Facility has been fumigated by pest control service, total cockroaches observed on site have decreased since the Feb 28, 2024 routine inspection.
Observed 2 to 15+ cockroaches in various glue traps throughout the premises
Observed 1 dead cockroach on top of back of house prep cooler's top (heat lamp area)
Corrective Action(s): Next treatment and servicing scheduled for March 18 (Monday). As per correction order issued Feb 28, 2024, provide pest control servicing reports within 3 days of servicing (due March 21 for next service)

Observation: OUTSTANDING: Grease and pest debris noted in the following areas:
-back of house green wire shelf
-behind the mini chest freezer in the central area (next to the food processor), particularly on top of the baseboards
-on electrical conduits and boxes in the back of house kitchen
-on the electrical junction box under the back of house kitchen speakers
Corrective Action(s): Ensure that the above noted areas are cleaned more thoroughly on a more frequent basis.

Operator has made a dirty water dumping schedule/log for the front of house handsink, as per correction order - good
Dinakdakan, palabok, and sisig were not being offered for sale to the public - good
BOH kitchen area handsink was stocked with liquid soap, paper towels, and hot/cold running water - good
Low temperature dishwasher leak had been repaired and broken baseboards under the dishwashing area had been repaired - good
FOH handsink's dirty water had been dumped - good

Cooling charts reviewed. Staff indicate cooling temperatures in both C and F and cooling start times are not within appropriate temperatures.
A reminder that cooling must be recorded from 60C to 20C (140F to 68F) within 2 hours. Cooling start and end times, as well as their respective temperature measurements must be on cooling logs.
