Observation (CORRECTED DURING INSPECTION): Butter chicken prepared this morning had an internal temperature of 18 C. It was reheated to 74 C during the inspection.
Corrective Action(s): Rationale: to prevent bacteria from growing in food and making people sick.
Always cool hot foods to 4C/40F or colder within 6 hours. Cool foods quickly by:
- Using a shallow container (or metal container - Don't think this is correct message)
- Dividing into smaller portions
- Using an ice bath or ice wand
- Stirring frequently.

Observation (CORRECTED DURING INSPECTION): The glasswasher had 0 ppm Iodine.
Corrective Action(s): Run all glasses through the dishwasher until it is repaired.

Observation: a) The dishwasher had 0 ppm chlorine. This was due to the line not being properly inserted into the sanitizer bucket.
b) The glasswasher had 0 ppm Iodine.
Corrective Action(s): a) Corrected during the inspection. Ensure that the dishwasher is checked daily.
b) Fix as soon as possible. Glasswasher company contacted during the inspection.

-Ensure that the glasswasher and dishwasher are checked daily and that logs are recorded.
All coolers were < 4 C.
All freezers were < -18 C.
Hand sinks supplied with hot and cold water, soap and paper towels.
No evidence of pests.
General sanitation was satisfactory.
