Observations:
- Walk-in cooler at 3'C
- Walk-in freezer at -19'C
- Preparation coolers (drawers and inserts) at or below 4'C
- Sandwich coolers at or below 4'
- Ice cream freezers (X2) at or below -18'C
- Glass-door cooler at 3'C
- General sanitation of premise is satisfactory
- Hand washing stations are supplied with hot and cold running water, liquid soap and paper towel
- Deli slicer observed in sanitary condition. Cleaning and sanitation procedures reviewed with staff - ensure to follow clean-in-place procedures in the approved food safety plan
- High temperature dishwasher measured at 75'C at plate surface (above minimum required final rinse temperature of 71'C)
- 3-compartment sink available with drain plugs
- QUATs sanitizer in pails with wiping cloths measured at 200 ppm QUATs concentration with test strip
- QUATs test strips are available on site
- Iodine glasswasher at bar measured at 25 ppm iodine concentration with test strip
- Ice machine observed in good sanitary condition with scoop placed outside the machine
- Pop dispenser nozzles observed in sanitary condition
- Deep cleaning of kitchen is completed two times per week as stated by manager
- No signs of pests during time of inspection
- Professional pest control company is contracted
- All food observed stored at least 6 inches off the floor and covered
- Raw meat stored away from ready-to-eat foods
- Chemicals are observed stored away from food
- First-in-first-out method is in use
- Staff observed wearing clean uniforms and hair nets
- Staff and public washrooms observed in sanitary condition
- Permit posted in a conspicuous location on site
