-Prep cooler was at 4C (top and bottom).
-Upright glass door cooler was at 4C.
-Upright metal door cooler was at 4C.
-Chest freezer was at -28C.
-Upright freezer was at -16C.
-Hot holding was greater than 60C.
-Hot foods are cooled a room temperature for less than 2 hours and then transferred into the cooler. Ensure the lid is left slightly open to allow steam to escape, promoting rapid cooling.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum 71C required for proper cooling).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer available and properly labelled. Sanitizer was diluted to 200ppm. To prepare 100ppm to 200ppm bleach sanitizer, add 1 teaspoon of bleach to 1L of water.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. Raw meat stored below ready-to-eat foods.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-Operator FoodSafe Level 1 valid until July 16, 2023.
