Observation:
The following equipment was found in disrepair:
1) The hand sink in the back area has fallen off the wall and not in operation. Staff currently use the front hand sink to wash their hands. The presence of a working hand sink is a requirement and encourages staff to wash their hands.
2) The prep table (beside the mop sink) in the back is lopsided and duct tape was found around the base of the legs. A non-level table is unsafe to work on, and duct tape isn't a material that is food grade.
Corrective Action(s):
1) Immediately install and seal the hand sink to the wall so that staff can properly wash their hands.

2) Remove the duct tape and repair the prep table so that it is level, and made of materials that are smooth, sealed, durable, washable, and waterproof.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; freezer -20C; thermometers present; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in 3-comp sink and spray bottles was 200ppm. All cloths shall be stored in a bucket of quats sanitizer when not in use. The sanitizer solution shall be changed 4 times a day with new solution.
- Foods stored correctly. Foods stored in food grade container; covered; labeled; date coded; in groups (dairy, veggie, proteins); proteins on lowest shelves; and all foods 6" off the floor on shelves.
- Food handling practices done correctly. Disposable gloves discarded after completion of tasks, and one staff member cooks and the other handles money.
- Sanitation level is good. Increase the frequency the walk-in-freezer floor is swept.
- FoodSafe certified staff present.
- No signs of pests.
- A follow-up inspection to be conducted on Monday to ensure the hand sink is installed and in working order.
