Observation: The wooden shelving unit in the walkin cooler is in poor condition. Some surfaces are excessively worn, heavily soiled and moldy.

Comments

Obtain several ice wands to speed up cooling of hot foods in pots.
General sanitation has improved, especially in the storage room. Continue to keep clean.
Frequency of pest control service has increased. Infestation has lessen. Continue to clean droppings. Make sure flour are stored in gnaw proof containers and all surfaces are cleaned at night before closing. Clean tops and sides of buckets (tamarind).
Temperature of refrigeration and hot holding is satisfactory.
