Observation (CORRECTED DURING INSPECTION): Some raw proteins stored above ready to eat foods including raw vegetables in walk-in cooler. Other foods lack proper lids to prevent or protect from contamination.
Corrective Action(s): Make sure staff continue to organize foods in the walk-in cooler to minimize opportunities for cross contamination and spread of germs. Try to keep raw proteins (even those partially prepared) on spearate shelving units and/or on lowest shelf in this unit.

Looked at garbage area again as it looked quite bad about one month ago. Much improved. Looks ok. Make sure this area receives regular clean up and a thorough reset several times a year. The beginning of spring, Summer and fall good intervals.
New coated wire shelves purchased in walk-in cooler. No more rusted shelves remain. GREAT! Thank you.
**Make sure the floor of walk-in cooler is kept free of significant moisture build up.
Fish holding units look clean. Records available.
Cooling units less than 4 C.
Hot holding above 60 C.
Freezing units below -18 C.
handwash stations good.
Dishwasher good (74 C)
Sani-buckets X2 at food prep stations measured about 200 ppm chlorine.
General organization in premises good.
