Observation (CORRECTED DURING INSPECTION): 1. Observed containers of sour cream stored before bins of raw protein in walk in cooler. This can be a source of cross contamination.
2. Observed boxes of take out container and packaged boxes of pop stored near the washroom utilities. This can be a source of contamination.
Corrective Action(s): 1. Do not store raw proteins above ready to eat foods. Ensure ready to eat foods are stored on shelving above or away from contaminated raw proteins.
2. Do not store food products or food containers near washroom facilities.

Observation: Flies observed in kitchen as the back door is open. Flies can contaminate food sources.
Corrective Action(s): Remove flies from premise, prevent their entry by closing the back door immediately. Correction required today. Install a screen door at a later date if the door is to stay open during summer months.

Premise is sanitary.
Hot and cold water available at the time of inspection.
Hand washing stations in use with liquid soap and paper towels.
Washrooms in use were sanitary with fully stocked sinks.
200 ppm quat sanitizer in use in spray bottles.
Dishwasher final rinse at the plate above 75.2C.
Cold holding units: glass dessert cooler at 4C milk, -20C for chicken strips freezer, walk in cooler 0.6C turkey,
walk in freezer -18.6C yam fries, dairy walk in cooler 3.0C jugs of milk, prep cooler 4.0C whip cream.
Hot holding sauce station: 65.1C and above gravy and beef dip.
Temperature monitoring of holding units in use.
Ice machine is sanitary with dedicated scoop. Recommendation to upgrade lid seals if they are showing wear and tear.
Utensils and take out containers were sanitary.
Mop sink is only used for floor washing. A physical separation is used with the hose bib.
NOTE: Ensure all staff are aware of the mob sink requirements to prevent food contamination.
