Observation (CORRECTED DURING INSPECTION): Food in walk-in cooler at 7C-11C: Built in thermometer reading 8C. Operator indicated that cooler door was frequently opened and closed. No records of temperature provided. Discarded all potentially hazardous foods (made at 11am, inspection time noted 4:30pm): 5 large containers of pasta 9C to 11C, lasagna 11C, 1 medium sized container of tortellini 10C, lasagna in tray 10C, 22 small containers of pasta 9C, 4 pieces of garlic bread 13C, 1 small container of tortellini 10C, small container of chopped carrots 11C, tray of chicken 10C, bucket of alfredo pasta sauce 7C, bucket of red sauce 10C, 6 small containers of sauce/dressing, 5 opened cans of fried vegetables 10C, opened half hour ago, moved to plastic container and put into cooler at front. Operator asked to take temperatures regularly and keep a record.

Do not use cooler until it is repaired to meet regulatory temperature requirement. Correction order issued. Please follow instructions on the order.
