Met with kitchen Manager and Store Manager on site.

We discussed the following information:
- COVID -19 Safety requirements
- Ceaning AND Sanitation procedure
- Food Safety certification and training
- Pest control - Eco lab providing integrative pest control measures
- Iodine sanitizer bottle was empty at the glass washer storage - replaced the bottle at the time of inspection
- Quat is approved sanitizer and measured to be at 300ppm/400ppm ( ensure to have adjusted quats concentration at max 200ppm ) - Eco lab is a chemical supplier and contacted for a follow up
- High temp dishwasher reached 182F at the final rinse

The following items will need your attention:

- cleaning schedule to be available/ including the sanitizers concentration
- test strips to be available for daily monitoring of the sanitizers ( iodine/ qauts )
- daily temperature logs / including high temperature dishwasher
- mop sink to be enclosed to prevent cross contamination at the food prep area
- provide the hand wash station supplied with a disposable paper towels and liquid soap in the dishwashing area.

Any changes on the approved floor plan need to be approved by your Health Department. Please submit your new floor plan proposal ( relocating the glass washer from the bar front location to the back / dishwashing area )
