Observation (CORRECTED DURING INSPECTION): 1. Food debris accumulation observed on interior lid of ice machine.

2. Serving scoops and knives stored in ambient temperature water between uses. Employees state that water is changed at the end of day.
Corrective Action(s): 1. Clean and sanitize above noted item.

2. Wash and sanitize serving scoops and knives.
- Serving utensils are to be stored in ice water between uses. Replace ice when it is melted.
- Serving utensils stored in ice water between uses must be washed and sanitized at least once every 4 hours.

- Handsink is accessible has hot and cold water, liquid soap and papertowels to facilitate handwashing practices.
- Coolers (Single Door Upright Display Cooler, Double Door Prep Cooler, Prep Cooler and Inserts): ≤4C
- Freezer: -18C
- Hot Holding (Tapioca Pearls): 60C
- Wiping cloths stored in 200 ppm chlorine bleach sanitizing solution.
- 200 ppm chlorine bleach solution available in spray bottles.
- Correct 3-compartment sink manual warewashing and sanitizing set-up observed. 100-200 ppm chlorine bleach solution used for sanitizing.
- Drain plugs available for employees to manually wash and sanitize dishes at 3-compartment sink.
- FOODSAFE requirements are in compliance. Employee on shift has valid FOODSAFE Level 1 certificate.
- No signs of pest activity at time of inspection.

Note:

- Operator has corrected Violation Code 312 cited on Routine Inspection Report DNGG-CZD2E3 (dated 10-Jan-2024]. Domestic dishwasher has been removed from the premises.
