Observation: Rodent droppings are noted - on bottom orange shelving rack; under orange shelving rack; under and around dishwashering area; corner around handwashing station and in staff washroom. Pest control company visits monthly and are coming back to seal some entry points. Operator indicated a professional cleaning company is coming this Sunday for cleaning.
Corrective Action(s): Remove droppings, sanitize all areas, and continue to monitor.
Increase pest control visit if needed.
Store all products above ground to facilitate pest monitoring.

Note:
For bigger equipment requiring to clean in place, operator has been using bleach to sanitize then grease with olive oil. Since facility is already using Quats as sanitizer for other food contact surfaces, stick with one chemical only. Going forward, wash-->rinse-->sanitize-->air dry-->grease with olive oil.
