Observation: Observed a bit of a build-up of dirt/debris under the main line coolers and under/behind dishwasher.
Corrective Action(s): Deep clean the hard to reach areas and under fixed equipment. Note: Seasonal shut down occurring in Jan-Mar, required cleaning to be completed before reopening in April.

Observation: Caulking around the dirty side of the dishwashing area walls is pulling up and one back board on clean wall of the clean side is coming away from wall.
Corrective Action(s): Redo caulking around dirty side of dishwashing area and secure back board on wall to the wall. Due before reopening in April 2018
