Observation: Noted a hot plate on site. Operator said she uses it to make the scrambled eggs for the breakfast sandwiches. No hood ventilation system on site.
Corrective Action(s): Discontinue use of hot plate for cooking and use the microwave. Remove hot plate from premises.

Comments

Hand wash station fully equipped with soap, paper towel, hot and cold running water.
All cooler units (display case, under counter, sandwich prep, upright 2 door..etc) all less than 4C
No hot holding available at time of inspection. Operator usually only hot holds soup.
Reviewed heating/reheating procedures at time of inspection. Ensure foods are heated in microwave to 71C before transfer to preheated hot holding unit at 60C.
Temperature logs maintained up to date.
Good general sanitation.No obvious sign of pest activity noted at time of inspection.
Meat slicer appeared clean at time of inspection. Operator said it is taken apart all all parts a thoroughly cleaned and sanitized.
Ice machine appeared clean with scoop stored upright with handle outside of the ice.
Chlorine sanitizer 100ppm.
High temperature dish washer achieved 71C (with thermolabel).
All foods appeared protected (ie. stored off the ground, covered..etc)
