Observation (CORRECTED DURING INSPECTION): Observed staff not sanitizing dishes/utensils for 2 minutes in 100ppm for manual warewashing.
Corrective Action(s): Ensure all dishes, utensils, and equipment are:
1. washed with warm soapy detergent water.
2. rinsed with clean water.
3. sanitized in 100ppm bleach for 2 minutes.
4. air dry.

Observation (CORRECTED DURING INSPECTION): Kitchen designated hand sink again obstructed from use by bin of corn starch.
Corrective Action(s): This is a recurring issue. Ensure kitchen designated hand sink is clear of obstructions at all times. Further non compliance may result in the issuance of a violation ticket.

Observation:
- Scoops stored directly in dry products.
- Bags of noodles stored on the floor in the walk in cooler.
- Uncovered food products observed stored in the walk in cooler.
Corrective Action(s): Ensure all food is protected from contamination at all times. Store all dispensing utensils outside of dry products and in a sanitary manner. Store all food products off the floor. Cover all food products to protect from contamination. Correct immediately.

Observation: Significant grease and food debris accumulations observed between the fryer and stove/oven unit, behind and underneath the fryers. Grease accumulations observed on the exhaust canopy.
Corrective Action(s): Thoroughly clean the above noted areas. Clean area on a regular basis. Correct by January 29, 2018.
