Observation (CORRECTED DURING INSPECTION): Large pot of cooked onion and oil found sitting at room temperature. Manager mentioned that it was sitting for 4 hours. Discussed proper cooling: cooling for 60C to 20C within 2 hours and 20C to 4C within 4 hours. Instructed manager to reheat the food in the pot above 74C and separate the food into smaller portions, use an ice wand to cool it down quickly, then put it into the fridge within 2 hours.

Observation (CORRECTED DURING INSPECTION): Prep cooler in kitchen: food at 8C (bottom) and 9C (top). Foods were moved to the walk-in cooler at 4C.

Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher at 0ppm chlorine detected. Manager adjusted the sanitizer line and rechecked at 50ppm at 44C.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hand washing station in the kitchen did not have any paper towels for drying of hands. Handwashing station at the back did not have paper towels and was low on hand soap.
Corrective Action(s): Manager to ensure that all handwashing stations are equipped with hand washing soap, liquid soap, paper towels, and hot and cold running water.
Correction date: immediately.

Observation: 1. Multiple food items in the fridge not covered.
2. Flour bin was not covered, an ant was found in there. The ant was removed.
3. An ant was found inside the pot of oil and onions, cooling at room temperature. Manager mentioned that it must have fallen in after sometime during the cooling process.
Corrective Action(s): 1. Provde covers for all food items.
2. Cover the flour bin when not in use.
3. Reheat the food to 74C.

Correction date: immediately.

Observation: Rodent droppings noted the following areas:
1. The floor beside the standing freezer and water boiler.
2. The bottom shelf near the dishwashing station.
3. The shelves in the back area where dry goods are stored.
4. Bathroom floor
5. The shelf at the front near the take-out utensils.
Corrective Action(s): Remove rodent droppings noted in the areas noted. Clean and sanitize with 100ppm bleach. Discard all take-out utensils. Provide new take-out utensils that are stored in hard plastic containers. Provide pest control at least once every 2 weeks until no evidence of pests is observed, then switch back to monthly. Provide at least 2 most recent pest control reports to EHO. Pest control report for June provided.
Correction date: 1 day.

Observation: Areas to clean:
-Lids of all of the dry storage food bins had appeared uncleaned.
-Shelves in the kitchen
-Floors throughout the kitchen
-Large blender had food debris stuck to the outer surface
Corrective Action(s): Clean the areas noted above.
Correction date: 2 days.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Ice machine was not working. Water valve was not closing.
2. Prep cooler was at 8C (bottom) and 9C (top)
3. Low temperature dishwasher: no chlorine detected. 50ppm detected after manager adjusted the chlorine intake line. (corrected)
4. Walk-in freezer door had a lot of ice build-up along door opening side and the door could not be closed properly.
5. The standing cooler beside the dishwasher was not working.
6. Broken skylight glass/plastic.
Corrective Action(s): 1. Repair ice machine (2 days)
2. Move food out into the walk-in cooler. Do not use cooler until it is at 4C or below. (corrected)
3. Ensure to check the sanitizer strength using test strips. (50ppm to 100ppm must be detected) (Corrected)
4. Remove the ice so that the door closes properly. (1 day)
5. Repair the cooler or remove it from the premises. (3 days)
6. Repair broken skylight glass/plastic (1 week)
