- do not cover cooling items with plastic until it has completely cooled; use plastic film rather than re-purposing other plastic bags
- no foods stored at room temperature
- sanitizer bucket available, measured 100ppm chlorine - ensure that wiping cloths are stored inside when not in use
- rice scoops stored in ice water
- handwashing stations clear of debris
- buckets that previously held soap and rinse aid for dishwasher discarded
- office area not in use for food prep
- raw wood replaced with plexiglas surface - once surface is no longer smooth and easily cleanable, this must be replaced
- pearls for bubble tea must be used within 4 hours of production or discarded; do not return them to the cooler - have a time tracking sheet for staff who work in the front drinks area
- meat slicer cleaned after every use
