Observation: Significant accumulation of dirt in the ceiling tiles above the cooking line and dishwasher, as noted in the previous report. The operator stated that new ceiling tiles will replace the old ones once the electrician installs the hot warmer.
Corrective Action(s): Replace the old dirty ceiling tiles with new ones. Please inform the inspector once the job has been completed.

Follow up inspection to report #DSOG-CG4U3P:

- All cold potentially hazardous food items stored at < or = 4C.
- All hot potentially hazardous food items stored at > or = 60C. Food items in the improperly working warmer designated as staff food.
- New warmer has not been installed yet. Once the warmer is installed, operator must ensure that temperature for hot holding is maintained at > or = 60C at all times.
- Surface sanitizer at dim sum station measured at 100ppm chlorine bleach concentration.
- All handwashing stations free of cooking equipment.
- Undercounter single door cooler in the middle of kitchen measured at 3C.
- Glasswasher at bar measured 50ppm chlorine bleach concentration.
- Working thermometers inside refrigeration units.
- General sanitation satisfactory. Recommend deep cleaning of hard to reach areas at least once a month to prevent accumulation of dirt and food debris.
- Daily temperature log kept mostly up to date (ie missing today's morning reading at the walk in cooler). Please ensure that daily temperature log is kept up to date for all coolers and freezers.
