Routine Inspection
-Hand washing sinks equipped with hot and cold running water, liquid soap and paper towel.
-Coolers registered at 4 C or below.
-Walk in freezer registered at -18 C.
-Hot holding of cooked foods at > 60C.
-Cooked bacon held at room temperature as per food safety plan. Ensure the time stickers are changed as new batches are cooked and that staff are aware of when food is to be discarded.
-High temperature dishwasher registered at 71 C on plate surface during final rinse.
-Sanitizer solution registered at 200 -400 ppm for quats and was available throughout the facility.
-Ice machine kept in a clean condition.
-Pest control in place.
-General sanitation satisfactory.
