Observation (CORRECTED DURING INSPECTION): 1) 4 large bricks of paneer found on site at 22C throughout product. Product had been left out since morning (>2hrs)
2) Malfunctioning prep cooler had product in lower part at 9C and above, while upper portion upwards of 12C
Corrective Action(s): All hazardous foods voluntarily discarded at time of inspection. Vacuum sealed bricks of paneer were destroyed

Observation (CORRECTED DURING INSPECTION): Single kitchen hand sink blocked off by dirty dishes at start of inspection
Corrective Action(s): Staff cleared the blocked access on request.
Always keep designated hand sink clean and clear of any obstructions. Remember hand washing isn't hand washing unless liquid soap is used!

Corrective Action(s): Discarded at time of inspection.
Have your pest control set sticky traps to determine where the cockroaches are coming from, and take action as needed to remove their food source, nesting areas, and moisture.

Observation: Prep cooler not maintaining product temperature at 4C or below. Measured a mimimum temperature of 9C below, 12C above
Corrective Action(s): Have this machine repaired to maintain product at 4C or below, including the upper inserts. Do not use until temperatures are correct

Hand sink supplied with liquid soap, paper towels, hot/cold running water
Walk in cooler measured at 5C
Prep cooler malfunctioning as noted above
Walk in freezer and standing freezer both measured at -15C
Display cooler with rasgulla and gulab jamun measured at 4C while other display cooler measured 6C. This second system is not storing any potentially hazardous foods
***Temperature records are not getting maintained as discussed last routine inspection. A template was provided for use. Every day the shop is open, all 5 refrigerators and the rinse temp of the dishwasher must be checked and recorded.
***Dishwasher took upwards of 45min to warm up. Ensure staff know not to use it until a reading of 78C is displayed. System hit 74C internally after the warm up period.
